The New Noma
In February 2017, Danish Copenhagen based restaurant, Noma closed down to the surprise of many, after 10 years of being one of the most successfully and influential restaurants in the world and winning “Best Restaurant” four times. Head Chef and part-owner René Redzepi, sought to reinvent the restaurant and since February 2018 the “New Noma” has been open to take guests on a culinary experience and adventure, yet again.

Noma 2.0 is now on a mission to reclaim its former glory as it has lost all Michellin Stars, when it closed down temporarily. Dedicated Chef René Redzepi is a brilliant superstar Chef, Time Magazine featured and front-runner for the “New Nordic Food Movement”, whom desire to embrace and position Scandinavian food in the center of the culinary world. His dedication, creativity and star-cast team of chefs from all over the world have the potential to bring Noma 2.0 on the fast track to becoming even better than the former Noma.

Noma 2.0’s current twelve course-menu (will switch soon) focuses on seafood and consists of; sea urchin, mussels, clams, sea cucumber, scallops, cod, squid, jelly-fish, sea snails and more. Every dish is perfectly matched with a magnificent wine menu. Noma will have a different approach to season, which they have divide in three. Winter/Start spring focuses on seafood, late spring/summer on vegetable and lastly venison and forest season from late summer until autumn.

Noma’s interpretation of Nordic gastronomy focuses on the core ingredients whether it may be sea urchin, sea snail or cod – the attention to details, subtle nuances of flavors and “raw” approach to cooking is avant-garde and so far ahead of any other restaurants.

Until now Noma 2.0 has have had roaring reviews but are these enough to yet again place Noma in the absolute top of world-class restaurants? Time will show, nonetheless Noma 2.0 is well worth the visit but book a head, waiting list is extensive!
